Hi - I am trying to mosaic a number of products using SNAP, and would like the resulting mosaic to include the standard deviation of one of the input products´ band. Is there any way I can do this in SNAP?

For mosaic this is not possible. But maybe you can switch to the L3 Binning.
There you have the option of getting either the mean and sigma or sum, sum_sq, weights and counts
