the question is “How to gather 27 coregister pair to once stack without lost intensity band or phase band?” .
the intensity and phase bands are just virtually stored. As long i and q are in the product, you can either re-create them (Raster > Data conversion > Complex to intensity / phase) or simply leave it because SNAP knows how to treat them.
