this is quite a hard question but I try to post it anyway, in case someone could give me an answer
As the LST does not provide the real air temperature as we commonly know it, is there a standard algorithm to apply to retrieve it, or which is the best way to get the real value of the temperature starting from the LST data? I think that goes beyond the functionalities of the S3tbx toolbox

That’s an interesting question. I think one would need to consider a land cover map. The surface type has an influence on the LST and the air temperature. But then there might be some correlation. But I’m not sure if this reliable. Maybe good enough for a rough estimate.
