is it possible (and how) to calculate roughness from Sentinel 1 using SNAP? What I should do. I want to compare roughness of bare soil with other crops or land use.

“Roughness” is not even a well-defined concept, so you cannot easily measure it with SAR. A surface that is “rough” at the scale of the radar wavelength does look brighter than a smooth one.
