can this software be used for water quality remote sensing inversion?
How did it go?

I’m not sure what you mean by “water quality remote sensing inversion”.
If you are looking for the retrieval water quality parameter, you can use the for example the C2RCC processor. It is available for several sensors. It is coming with the S3TBX. There are also other processors which compute water indices.
So yes, SNAP can do this.
