I came to the same conclusion regarding image classification, from reading the classification section within the workshop guide, (specifically section 4.2.3), which states to make use of the ConcatenateImages application to generate a single multi-channel image.
I’ll actually run the workshop myself, so I can confirm this.

hello i am new to the forum and so thank you in advance for the help. I am trying to process several sentinel-1 GRD images but I can’t understand one thing. In the name of the product that I download I have a specific date, for example 20220104 (January) but when I finish the pre-processing phase, including the ‘apply orbit file’ phase, and go to coregister with other images the product date is given to me as 20220204 so February. is this normal? what is the real date of image acquisition?
