I want to work with Capella SAR data for interferometry. Are all collect modes and complex formats valid for SNAP? Which is the appropiate processing? It is necessary to apply all the pipeline shown in the image below?

The workflow you mentioned is only intended for TOPSAR data.
I don’t think it is currently possible to do any interferometry with Capella data in SNAP
I’m not sure what the process of adding new sensors to the SNAP toolbox is, but I’ve added an example here to coregister a pair using the capella-reader package and isce3
