I wonder if exists a way to check which version update of SNAP I’m running.
Any tips are welcomed

If your system supports the GUI, Help/About gives the versions for SNAP Desktop and SNAP Engine, and also of the installed Sentinel-B Toolboxes. Exhaustive detail for installed modules is saved to messages.log. You can also list modules with versions in headless mode:
snap --nosplash --nogui --modules --list
