Images (Sent 2) displayed in SNAP show pixel values in reflectance or radiance (automatically rescaled from DN). How to view generic DN values?

You can open the jp2 files separately. Then the data is not interpreted.
This is one way, but you can also use the Band Maths. Right click on the band name, then select Band Maths.
As expression you can use
<band_name>.raw
e.g.: B1.raw
This will create a new band with the raw DN values.
