I installed S2GM SNAP Plugins on SNAP 7.0. Now I’m evaluating to install SNAP 8.0: are S2GM SNAP Plugins compatible with SNAP 8.0?
Where can I find S2GM SNAP Plugins documentation?

the plugin should be available via the plugin manager as it was for SNAP 7.
Actually, this module contains only a reader for the data produced by the S2GM project. “Plugins” is a too big name for the module. It was initially intended to add more to this module. But this didn’t happen.
A bit documentation can be found in the help. And there it is linked to the S2GM documentation.
